For the vinaigrette:
  1. Whisk together balsamic vinegar, oil, parsley, lemon juice, mustard and thyme in a small bowl.
  2. Season with salt and pepper.
  3. Place all vegetables in a large bowl, add vinaigrette, and toss to coat.
For the skewers:
  1. Preheat grill to medium heat.
  2. Skewer vegetables, alternating between zucchini, yellow squash, bell peppers and tomatoes. Reserve any remaining vinaigrette in bowl.
  3. Grill the skewer 5-8 minutes until vegetables are browned around the edges and begin to soften. Serve immediately.
